I’ve been waiting to post about shāo kǎo (pronounced “sha-ow kah-ow) for a while now, mostly because it’s an amazing part of China, and especially ShaoXing because everyone knows that ours is the best. Shāo kǎo is Chinese for “b-b-q,” as they say in English. It’s street food–so they set up and take down every night, and you pick out your food from a refrigerated cart. They cook it (wo bu yao la=not spicy for me) and bring it to you on a tray.
